Job Description

The role of the Sushi Sous Chef is to create the highest quality of sushi products. The Sushi Sous Chef is responsible for developing and educating the sushi team, which in turn will assist with the bottom line profitability of the sushi bar and ensure that we are serving only the best products.


Clean and prepare all fresh fish for the sushi bar


Order and/or requisition food and other supplies needed to ensure efficient sushi operation; responsible for controlling inventory, stocking, rotation of product, including control and care of perishables


Analyze recipes to cost out prices to menu items, based on food, labor, and overhead cost, while also taking into such factors as seasonal availability and customer count


Instruct and oversee Assistant Sushi Chefs or other cooks in preparation, sanitation, cooking, garnishing, and presentation of food; Determine production schedules as well as staffing levels


Present beautiful sushi in a consistent and eye-appealing manner; create decorative food displays


Inspect supplies, equipment, or work areas to ensure conformance to established standards and arrange for repair when necessary; Practice exemplary food sanitation guidelines


Develop menus including menus for special occasions, such as weddings or banquets


Communicating with Executive Chef and management team to set and achieve AOP goals and development plans for both the restaurant and the sushi bar


Provide excellent customer service

Required Skills

Required Experience

5 years in business creating modern cutting edge sushi, working with top shelf ingredients.


Skill in knife usage / sharpening


Previous chef experience preferred


Ability to manage sushi assistants; prior supervisory or managerial experience preferred


Serve Safe or comparable certification


Creativity and artistic flair


Read, write, and speak fluent English; knowledge of Spanish and basic Japanese terminology helpful


Able to work flexible schedule including mornings, evenings, weekends, and holidays when necessary


Physical requirements:

  • Ability to lift up to 30 lbs.  
  • Able to stand for long periods of time, up to 12 hours
  • Frequent bending, kneeling, stooping and walking up and down stairs and ramps
  • Excellent manual dexterity; rapid use of hands
  • Able to withstand extremes of heat and or cold, plus temperature changes
